Football season is upon us. Celebrate with some Wagyu Chili Mac. 2020 sucks, your tailgate food doesn't have to
Ingredients:
1 pound wagyu ground beef
1/2 bushel roma tomatoes made into sauce ( or several cans (4 or 5) crushed tomatoes to amount of red sauce desired)
4 small cans kidney beans drained
1/2 pound cooked elbow macaroni
minced garlic
chili powder
salt
pepper
paprika
garlic powder, onion powder, cayenne pepper
Brown ground beef over low heat until cooked through. Drain. Set aside
The proper way to make red sauce is to peel and core roma tomatoes. Cook down into red sauce. I core my tomatoes, put them in my food processor and then cook down. You can also buy cans of crushed tomatoes and cook down into a sauce. To each his/her own.
Add ground beef and kidney beans. I like to use a mixture of light and dark but you can use whichever floats your boat. Add cooked macaroni, we use elbow but you can go wild and use whatever you like. Add garlic, I left the amount out because we LOVE our garlic. I added 3 or 4 spoonful's but add as much or little as you prefer. Add spices to taste. I recommend adding a little bit at a time until your taste buds are happy. My Dad always said "you can always add more but you can't take it out once you have put it in" He was referring to salt in soup but the same applies here. Have fun, don't be afraid. Cook down until sauce is thickened. Top with some shredded cheese and some sour cream. Pair with some corn bread.
