Wagyu Osso Buco

Makes a delicious Christmas or New Year's dinner


2 Wagyu beef shanks


salt & pepper

3 medium carrots, peeled and sliced

1 small onion, chopped

1 can tomato paste

1 can crushed tomatoes

2 garlic cloves minced

1 cup dry white wine

2 cups chicken bone broth

Blot excess water off Beef Shanks and season with salt and pepper. I will leave the amounts up to you as you know your desired saltiness. In a Dutch oven with butter, sear each side of the beef shank. About three minutes, be careful not to overcook. You just want to seal the meat. Set aside.

In Dutch oven place carrots, onion & garlic. drizzle with olive oil. Sautee until soft, about eight minutes. Add in the tomato paste, stir well. Return beef shanks to the pan. Add crushed tomatoed, wine and one cup of the chicken broth. If you want to add more spices such as a dash of basil, rosemary or oregano (or extra garlic) now is the time. Cover and simmer, stirring occasionally and flipping the beef shanks over every fifteen minutes. Watch fluid levels and add more chicken broth if needed. Simmer until meat is tender and falls off the bone. Roughly 1 and a half hours.
